secret-ingredient tropical smoothie bowl
It's sunny today, which automatically means it's OK to have a smoothie bowl in the middle of winter.
For once though, I wasn't feeling kale in my smoothies. Or anything green really (shocking, I know). To be perfectly honest, I was dreaming up this smoothie bowl right before I went to bed yesterday...
So here it is. Gorgeous, simple, and banana-less. The beets give it a beautiful pink color, and you can't even really taste them!
Secret-Ingredient Tropical Smoothie Bowl
serves: 1 (16 oz) | time: 10 minutes | breakfast | vegan, paleo
- 5 slices of frozen beets
- 1/2 avocado
- 1 tbsp vanilla vegan protein powder (I used Vega)
- 2 tbsp flaxseed meal
- 1 tbsp coconut oil
- 1 piece raw turmeric
- 1 squeeze lemon juice
- 4 oz water/nut milk of choice
- 1/8 cup frozen mango
- 1/4 cup frozen berries
- 1/4 cup frozen pineapple
- Add ingredients to single-serve blender cup in the order listed and blend until smooth.
- Top with toppings of choice (I used coconut flakes, cacao nibs, a superfood trail mix, and 1/2 a banana) and enjoy!
